Our Somerset Ricotta is made using the rich whey from our Cheddar making. With its full flavour, pleasant saltiness and unique texture, it makes a highly versatile cheese. Try it drizzled with honey as a simple dessert, or mix it with softs herbs and olive oil and serve on fresh sourdough. It’s also great in pasta dishes or pastries, and elevates cakes, pastries and puddings (try it in a cheesecake instead of cream cheese!) to the next level.
